Chicken and colored pepper pizza

Ingredients

1 Garlic Clove - crushed
1/4 Green Pepper - diced
1/2 cup Mozzarella Cheese - shredded
Salt and Pepper
1 tbsp Lemon Juice - or vinegar
1/2 cup Cheddar Cheese - or gouda cheese, shredded
2 tbsp Olive Oil
1 Tomato - diced
1/4 Red Pepper - diced
2 Chicken Breasts - boneless
2 Onions - small size, 1 grated, 1 chopped
1/2 tsp Sumac - or crushed dried thyme
1 Pizza Dough
1/4 Yellow Pepper - diced

Directions

  1. Wash chicken breasts well. Squeeze grated onion to get only its juice out and discard the flesh. In a bowl, add chicken, onion juice, garlic, lemon juice, salt and pepper. Leave to marinate for 1 hour.
  2. In a skillet, heat 1 tbsp oil over medium heat. Cook chicken until just tender. Don't over cook. Cut chicken into strips or cubes.
  3. Roll dough on a slightly floured surface. Spread dough to cover a 30 cm diameter baking sheet or pizza pan or its equivalent rectangular baking sheet.
  4. Brush dough with 1 tbsp oil. Add chicken, tomatoes, chopped onion, and colored peppers. Sprinkle sumac or thyme. Add mozzarella and cheddar cheese on top.
  5. Heat oven to 220-230 C. Bake pizza in oven for 10-15 minutes. Serve immediately.

You can use left over cooked chicken in this recipe.
