Chicken basil pizza

Ingredients

2 Chicken Breasts - or 1/2 a boiled chicken
1/2 cup Parmesan Cheese - grated
1/2 cup Basil - leaves, fresh
Salt and Pepper
1 Pizza Dough
1/2 cup Pizza Sauce
1/2 cup Mozzarella Cheese - shredded
2 tbsp Olive Oil
1 cup Mushrooms - sliced or green olives

Directions

  1. Cut chicken breasts into bite size pieces. Season with salt and pepper.
  2. In a skillet, heat olive oil over medium heat. Cook chicken until just tender. If you use boiled chicken half, just remove skins and bones and cut into bite size pieces.
  3. Roll dough on a slightly floured surface. Spread dough to cover a 30 cm diameter baking sheet or pizza pan or its equivalent rectangular baking sheet.
  4. Spread pizza sauce over dough. Add chicken pieces, then sprinkle mushrooms or olives and half quantity of basil leaves. Mix mozzarella and Parmesan cheese and sprinkle cheeses on top.
  5. Heat oven to 220-230 C. Bake pizza in oven for about 15 minutes. Remove from oven and garnish with remaining basil leaves. Serve immediately.

You can use any left over cooked chicken in this recipe and ignore the first 2 steps. You can also add any other ingredients that you like.
