Cooked vegetable pizza

Ingredients

1 Onion - or 2 garlic cloves, crushed
3/4 cup Mozzarella Cheese - shredded
1 tsp Thyme - oregano, or rosemary, crushed
2 Zucchini - sliced
2 tbsp Parmesan Cheese - grated
1/2 cup Pizza Sauce
Salt and Pepper
1/2 Red Pepper - sliced
Sunflower Oil Slite - for frying
1 Pizza Dough
1/2 Green Pepper - sliced
1/2 cup Mushrooms - sliced
1 Eggplant - sliced

Directions

  1. Cut each eggplant slice into quarters. Fry eggplant in oil until its color just starts to change. Don't over fry.
  2. Slice onion and cut each slice into quarters. In a skillet, heat 3 tbsp oil over medium heat. Add onion or garlic and stir for 10 seconds.
  3. Add zucchini, peppers and mushrooms and stir for about 5 minutes until vegetables are crispy tender. Sprinkle salt and pepper.
  4. Roll dough on a slightly floured surface. Spread dough to cover a 30 cm diameter baking sheet or pizza pan or its equivalent rectangular baking sheet.
  5. Spread pizza sauce over dough. Add eggplant and vegetable mix. Sprinkle thyme or rosemary. Sprinkle cheeses on top.
  6. Heat oven to 220-230 C. Bake pizza in oven for 10-15 minutes. Serve immediately.

You can use red chili pepper if you want the recipe to be hot.
